Sweet Potato & Sausage Soup

Ingredients
- 1 Tbsp olive oil
- 1 large yellow onion, diced large
- 1 cloves garlic
- salt & pepper (more than you think)
- 3/4 lb sweet Italian sausage
- 1 1/2 lb sweet potatoes, pealed & diced medium
- 4 cups chicken broth
- 3/4 cup small pasta shells
- 4 cups greens (such as Kale or Swiss chard), coarsely chopped
- grated Parmesan cheese
Directions
- Heat oil in a large pot over medium high.
- Cook onion & garlic until onion is translucent.
- Season w/ salt & pepper.
- Add crumbled sausage & brown.
- Add sweet potatoes, broth & 2 cups water & bring to boil.
- Add pasta & cook 3 minutes less than directed.
- Reduce heat to simmer, add greens, and cook until pasta is tender & greens are wilted.
- Serve topped w/ Parmesan cheese.
Notes
- For New Year’s Day good luck, use collard greens and add 1 can of black eyed peas, drained.
- Serve w/ corn bread.
