Sweet Potato & Sausage Soup

Ingredients

  • 1 Tbsp olive oil
  • 1 large yellow onion, diced large
  • 1 cloves garlic
  • salt & pepper (more than you think)
  • 3/4 lb sweet Italian sausage
  • 1 1/2 lb sweet potatoes, pealed & diced medium
  • 4 cups chicken broth
  • 3/4 cup small pasta shells
  • 4 cups greens (such as Kale or Swiss chard), coarsely chopped
  • grated Parmesan cheese

Directions

  1. Heat oil in a large pot over medium high.
  2. Cook onion & garlic until onion is translucent.
  3. Season w/ salt & pepper.
  4. Add crumbled sausage & brown.
  5. Add sweet potatoes, broth & 2 cups water & bring to boil.
  6. Add pasta & cook 3 minutes less than directed.
  7. Reduce heat to simmer, add greens, and cook until pasta is tender & greens are wilted.
  8. Serve topped w/ Parmesan cheese.

Notes

  • For New Year’s Day good luck, use collard greens and add 1 can of black eyed peas, drained.
  • Serve w/ corn bread.
