Southwestern Chicken Chili
Ingredients
- 2 large chicken breasts, cooked & shredded
- 2 cans black beans, drained
- 2 cans diced tomatoes, drained
- 1 can diced green chiles
- 1 1/2 cup chicken stock
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp coriander
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 1/2 Tbsp apple cider vinegar
- 1 1/2 tsp smoked paprika
- Mexican cheese
- sour cream
- onion, chopped
- hot sauce
Directions
- Place all ingredients except for chicken in a large pot.
- Bring to boil on high then lower heat and simmer while cooking chicken.
- Mix in chicken and cook until warm.
- Serve topped with Mexican cheese, sour cream, onion & hot sauce.
Notes
- One option is to bake the chicken breasts in a 350° oven until internal temperature reaches 165°.
- Another option is to place all the other ingredients into a slow cooker, place the chicken on top & cook for 6-8 hours on low until the chicken can be easily shred.
