Southwestern Chicken Chili

Ingredients

  • 2 large chicken breasts, cooked & shredded
  • 2 cans black beans, drained
  • 2 cans diced tomatoes, drained
  • 1 can diced green chiles
  • 1 1/2 cup chicken stock
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp coriander
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 Tbsp apple cider vinegar
  • 1 1/2 tsp smoked paprika
  • Mexican cheese
  • sour cream
  • onion, chopped
  • hot sauce

Directions

  1. Place all ingredients except for chicken in a large pot.
  2. Bring to boil on high then lower heat and simmer while cooking chicken.
  3. Mix in chicken and cook until warm.
  4. Serve topped with Mexican cheese, sour cream, onion & hot sauce.

Notes

  • One option is to bake the chicken breasts in a 350° oven until internal temperature reaches 165°.
  • Another option is to place all the other ingredients into a slow cooker, place the chicken on top & cook for 6-8 hours on low until the chicken can be easily shred.
