Sausage & Peppers

A delicious meal for the whole family.

Ingredients

  • 16 oz. penne pasta
  • 1 tsp. olive oil
  • 1 lb. hot italian sausage
  • 3 cups onion cut into strips
  • 5 cups bell pepper cut into strips (green, red or yellow)
  • 4 cans diced tomatoes (drained, not petite)
  • 2 Tbsp. brown sugar
  • 3 Tbsp. balsamic vinegar
  • 4 bay leaves
  • 1 Tbsp. dried basil
  • 1 tsp. crushed dried fennel
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • grated Parmesan cheese

Directions

  1. Cook pasta according to directions.
  2. Brown crumbled sausage in an extra deep 12″ skillet.
  3. Add peppers & partially cook.
  4. Add onions & cook until onions are translucent.
  5. Add tomatoes, brown sugar, balsamic vinegar, bay leaves, basil, fennel, salt & pepper.
  6. Cook uncovered until vegetables are tender & sausage is thoroughly cooked.

Notes

Use freshly grated Pecorino Romano cheese to elevate this recipe to something truly special.
