Sausage & Peppers
A delicious meal for the whole family.
Ingredients
- 16 oz. penne pasta
- 1 tsp. olive oil
- 1 lb. hot italian sausage
- 3 cups onion cut into strips
- 5 cups bell pepper cut into strips (green, red or yellow)
- 4 cans diced tomatoes (drained, not petite)
- 2 Tbsp. brown sugar
- 3 Tbsp. balsamic vinegar
- 4 bay leaves
- 1 Tbsp. dried basil
- 1 tsp. crushed dried fennel
- 1/2 tsp. salt
- 1/2 tsp. pepper
- grated Parmesan cheese
Directions
- Cook pasta according to directions.
- Brown crumbled sausage in an extra deep 12″ skillet.
- Add peppers & partially cook.
- Add onions & cook until onions are translucent.
- Add tomatoes, brown sugar, balsamic vinegar, bay leaves, basil, fennel, salt & pepper.
- Cook uncovered until vegetables are tender & sausage is thoroughly cooked.
Notes
Use freshly grated Pecorino Romano cheese to elevate this recipe to something truly special.
