Salmon

Ingredients

  • 1/4 cup pineapple juice
  • 1 Tbsp. lemon juice
  • 1 1/2 lb salmon, cut into 4 pieces
  • 2 Tbsp. olive oil
  • 2 Tbsp. brown sugar
  • 1/4 tsp. smoked paprika
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. chili powder
  • 1/8 tsp. garlic powder

Instructions

  1. Combine salmon, pineapple juice & lemon juice in an Ziploc bag. Refrigerated for 1 hour, mixing occasionally.
  2. Preheat oven to 400°.
  3. Place salmon in 11″ x 17″ baking dish coated w/ cooking spray.
  4. Brush olive oil on top of the salmon fillets.
  5. Mix dry ingredients and sprinkle on top.
  6. Bake salmon until it easily flakes w/ a fork or approximately 12 minutes.
  7. Serve with rice & steamed broccoli.
