Salmon
Ingredients
- 1/4 cup pineapple juice
- 1 Tbsp. lemon juice
- 1 1/2 lb salmon, cut into 4 pieces
- 2 Tbsp. olive oil
- 2 Tbsp. brown sugar
- 1/4 tsp. smoked paprika
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. chili powder
- 1/8 tsp. garlic powder
Instructions
- Combine salmon, pineapple juice & lemon juice in an Ziploc bag. Refrigerated for 1 hour, mixing occasionally.
- Preheat oven to 400°.
- Place salmon in 11″ x 17″ baking dish coated w/ cooking spray.
- Brush olive oil on top of the salmon fillets.
- Mix dry ingredients and sprinkle on top.
- Bake salmon until it easily flakes w/ a fork or approximately 12 minutes.
- Serve with rice & steamed broccoli.
