Roasted Sweet Potatoes

INGREDIENTS

  • 2 c. sweet potatoes pealed & diced into 1/4 in. cubes
  • 1 c. coarsely chopped sweet onion
  • 1 tsp olive oil
  • 1 Tbsp fajita seasoning
  • 1 Tbsp finely chopped garlic

INSTRUCTIONS

  1. Preheat oven to 425 degrees
  2. Gently toss potatoes & onion in olive oil
  3. Mix in fajita seasoning & garlic until evenly distributed
  4. Place parchment paper in the bottom of a baking sheet
  5. Spread mixture into a single layer of baking sheet
  6. Bake for 12 minutes.
  7. Rotate pan and bake for 10-12 minutes until fork tender

SIMPLIFIED VARIATION

  • Cut 1 large sweet potatoes into 3/4″ cubes (about 4 cups)
  • Toss chunks in olive oil and salt. Place on cooking sheet lined with parchment paper
  • Set oven to 325 degrees. Immediately place potatoes into oven as it starts to heat
  • Bake for 20-25 minutes until fork tender
