Roasted Sweet Potatoes
INGREDIENTS
- 2 c. sweet potatoes pealed & diced into 1/4 in. cubes
- 1 c. coarsely chopped sweet onion
- 1 tsp olive oil
- 1 Tbsp fajita seasoning
- 1 Tbsp finely chopped garlic
INSTRUCTIONS
- Preheat oven to 425 degrees
- Gently toss potatoes & onion in olive oil
- Mix in fajita seasoning & garlic until evenly distributed
- Place parchment paper in the bottom of a baking sheet
- Spread mixture into a single layer of baking sheet
- Bake for 12 minutes.
- Rotate pan and bake for 10-12 minutes until fork tender
SIMPLIFIED VARIATION
- Cut 1 large sweet potatoes into 3/4″ cubes (about 4 cups)
- Toss chunks in olive oil and salt. Place on cooking sheet lined with parchment paper
- Set oven to 325 degrees. Immediately place potatoes into oven as it starts to heat
- Bake for 20-25 minutes until fork tender
