Jerk Pork & Caribbean Salsa

Ingredients
- 3 lbs Boston butt
- 6 cloves garlic, crushed
- 2-3 Tbsp jerk seasoning
- 1/2 tsp salt
- 4-5 Tbsp lime juice (divided)
- 1/2 cup orange juice
- 1 avocado, diced
- 2 large ripe mangos, coarsely chopped
- 1 1/2 Tbsp red onion, chopped
- 1-2 Tbsp fresh cilantro, chopped
- salt & pepper to taste
Directions
- Cuts slits in the pork & stuff with half of the crushed garlic.
- Create marinade by combining the remaining garlic, jerk seasoning, 1/2 tsp salt, orange juice & 2 Tbsp of lime juice.
- Marinate the pork 5-8 hours, turning occasionally.
- Put everything in a slow cooker & cook on low for 9 hours.
- Remove pork & shred.
- Return pork and 1 cup of liquid back to slow cooker
- Cook for 15 minutes.
- Create salsa by combining avocado, mango, onion, cilantro,2-3 Tbsp of lime juice, salt & pepper. Refrigerate until serving.
