Honey Lemon Chicken

Ingredients
- 2 chicken breasts (pound to about a 1/2inch thickness and cut in half length-wise)
- 1/2 cup of flour (for dredging)
- Salt and pepper
- Garlic powder
- paprika
- Oregano
- 2 tbsp of olive oil
- 2 tbsp of unsalted butter (divided into 2)
- 1/2 cup chicken stock
- 2 tbsp honey
- 3 lemons
- Red pepper flakes
- Parsley (optional)
Instructions
- Preheat oven to 375.
- Season chicken and flour w/ salt, pepper, garlic powder, paprika, & oregano.
- Preheat skillet over medium heat, add olive oil.
- Lightly dredge chicken in flour, shaking off excess flour.
- Place chicken in skillet and brown it on both sides, add 1 tbsp of butter to pan during the process.
- Once browned, place chicken into an oven safe dish.
- In the skillet, add the remaining tbsp of butter, chicken stock, and honey. Simmer briefly then pour over chicken. Add juice of 2 lemons.
- Sliced the third lemon THINLY and remove seeds. Arrange on top of the chicken & add red pepper flakes to you liking.
- Bake at 375 for 25-30min.
- Serve alongside rice and roasted veggies (highly recommend broccoli or Brussel sprouts).
