Chorizo & Corn Stuffed Mushrooms

Ingredients
- 6 oz. chorizo
- 1/2 c. onion, finely chopped
- 2 cloves garlic, minced
- 1 can (11 oz.) extra sweet whole kernel corn, drained
- 2 oz. reduced fat cream cheese
- 1/4 c. fat-free sour cream
- 1/2 tsp. salt
- 2 slices of white bread
- 24 lg. mushroom caps
Instructions
- Preheat oven 400 degrees
- Remove chorizo from casings
- Cook chorizo, onion & garlic over medium heat until browned
- Drain chorizo mixture. Pat dry w/ paper towels.
- Combine cream cheese & sour cream. Mix until smooth.
- Add chorizo, corn, & salt to complete stuffing.
- Pulse bread in food processor to produce fine crumbs
- Layer into each mushroom 3/4 tsp. bread crumb & 2 tsp. stuffing.
- Top w/ remaining breadcrumbs & cooking spray.
- Place on baking sheet coated w/ cooking spray.
- Bake until tops are browned.
