Chorizo & Corn Stuffed Mushrooms

Ingredients

  • 6 oz. chorizo
  • 1/2 c. onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (11 oz.) extra sweet whole kernel corn, drained
  • 2 oz. reduced fat cream cheese
  • 1/4 c. fat-free sour cream
  • 1/2 tsp. salt
  • 2 slices of white bread
  • 24 lg. mushroom caps

Instructions

  1. Preheat oven 400 degrees
  2. Remove chorizo from casings
  3. Cook chorizo, onion & garlic over medium heat until browned
  4. Drain chorizo mixture. Pat dry w/ paper towels.
  5. Combine cream cheese & sour cream. Mix until smooth.
  6. Add chorizo, corn, & salt to complete stuffing.
  7. Pulse bread in food processor to produce fine crumbs
  8. Layer into each mushroom 3/4 tsp. bread crumb & 2 tsp. stuffing.
  9. Top w/ remaining breadcrumbs & cooking spray.
  10. Place on baking sheet coated w/ cooking spray.
  11. Bake until tops are browned.
