Slow Cooker Chili

An Italian sausage chili to warm up family holidays.

Ingredients

  • 1 1/2 lbs hot italian sausage
  • 1 lb lean group beef
  • 2 medium onions, coarsely chopped
  • 2 x 3/4 oz envelopes of chili seasoning mix
  • 4 x 16 oz cans of dark red kidney beans, drained
  • 4 x 14 oz cans of diced tomatoes, drained (2 regular, 2 petite)
  • 2 x 6 oz cans of tomatoe paste
  • 1 x 32 oz carton of chicken stock
  • 1/2 cup Texas Pete hot sauce
  • 1 Tbsp fennel, crushed
  • Fritos
  • diced onion
  • sour cream
  • Mexican cheese

Directions

  1. Partially cook sausage and ground beef in a large skillet.
  2. Remove meat from skillet and drain.
  3. Sauté diced onion until translucent.
  4. Add meat and onion to your slow cooker.
  5. Add all other ingredients except 1 can of petite diced tomatoes.
  6. Cover and cook for 8 hours on low or 4 hours on high.
  7. 1 hour before serving, add 1 can of petite diced tomatoes.
  8. Serve topped w/ cheese, onions, Fritos and sour cream.
