Chicken & Snow Pea Stir Fry

Ingredients
- 3 chicken breasts, cut into 1/2″ strips
- 4 cloves garlic, minced
- 2 Tbsp dry sherry
- 1 Tbsp soy sauce
- 1 Tbsp hoisin sauce
- 2 Tbsp corn starch
- 1 Tbsp peanut oil
- 40 snow peas, ends & strings removed
- 1/2 cup sliced water chestnuts, drained
- 1/2 cup chicken stock
- 1 tsp salt
- 1/2 tsp cashews
Directions
- Create marinade by combining garlic, sherry, soy sauce & hoisin sauce.
- Marinate chicken in mixture for 5 minutes.
- Heat oil in wok.
- Stir fry chicken mixture for 3-4 minutes.
- Add peans & chestnuts. Stir fry for 30 seconds.
- Dissolve corn starch in small amount of cold chicken stock.
- Add chicken stock, corn starch & salt.
- Stir fry until gravy thickens.
- Mix in cashews & serve.
