Chicken & Snow Pea Stir Fry

Ingredients

  • 3 chicken breasts, cut into 1/2″ strips
  • 4 cloves garlic, minced
  • 2 Tbsp dry sherry
  • 1 Tbsp soy sauce
  • 1 Tbsp hoisin sauce
  • 2 Tbsp corn starch
  • 1 Tbsp peanut oil
  • 40 snow peas, ends & strings removed
  • 1/2 cup sliced water chestnuts, drained
  • 1/2 cup chicken stock
  • 1 tsp salt
  • 1/2 tsp cashews

Directions

  1. Create marinade by combining garlic, sherry, soy sauce & hoisin sauce.
  2. Marinate chicken in mixture for 5 minutes.
  3. Heat oil in wok.
  4. Stir fry chicken mixture for 3-4 minutes.
  5. Add peans & chestnuts. Stir fry for 30 seconds.
  6. Dissolve corn starch in small amount of cold chicken stock.
  7. Add chicken stock, corn starch & salt.
  8. Stir fry until gravy thickens.
  9. Mix in cashews & serve.
