Brunch Casserole

From the Pirates’ House Cookbook

Ingredients

  • 12 slices of white bread, crusts removed
  • butter, softened
  • 1 lb pork sausage
  • 1/2 lb grated Swiss cheese
  • 4 eggs
  • 3 cups milk
  • 1 tsp. salt
  • Tabasco pepper sauce

Directions

  1. Crumble sausage & cook until lightly browned. Drain & set aside.
  2. Butter bread lightly on one side.
  3. Place 6 slices of bread in a 3 quart baking dish buttered side up.
  4. Sprinkle half of the sausage & half of the cheese on top.
  5. Repeat w/ the remaining bread, sausage & cheese.
  6. Beat together eggs, milk, salt & Tobacco until well blended.
  7. Pour mixture over sausage & cheese.
  8. Press down on bread until milk comes through.
  9. Cover & refrigerate over night.
  10. Bake at 350° for 1 hour until puffy & brown.

Notes

  • Top w/ Tabasco to taste.
  • Serve w/ fruit salad.
