Bow Tie Pasta
Ingredients
- 8 oz. farfalle pasta, cooked according to instructions
- 1/2 lb chicken breast, cooked & cut into strips
- 12 oz. feta cheese, crumbled (divided)
- 12 oz. jar roasted red peppers (drained & finely chopped)
- 4 Tbsp. olive oil
- 2 cloves garlic, minced
Instructions
- Sauté garlic in 2 Tbsp. of olive oil over medium heat for 3 minutes.
- Add peppers, chicken & 2 Tbsp. of oil & cook until heated.
- Toss pepper & chicken mixture w/ 8 oz. of feta & hot pasta.
- Serve topped w/ additional feta cheese.
