Bow Tie Pasta

Ingredients

  • 8 oz. farfalle pasta, cooked according to instructions
  • 1/2 lb chicken breast, cooked & cut into strips
  • 12 oz. feta cheese, crumbled (divided)
  • 12 oz. jar roasted red peppers (drained & finely chopped)
  • 4 Tbsp. olive oil
  • 2 cloves garlic, minced

Instructions

  1. Sauté garlic in 2 Tbsp. of olive oil over medium heat for 3 minutes.
  2. Add peppers, chicken & 2 Tbsp. of oil & cook until heated.
  3. Toss pepper & chicken mixture w/ 8 oz. of feta & hot pasta.
  4. Serve topped w/ additional feta cheese.
