Beef & Tomatoe Stir Fry

Ingredients

  • 1 1/4 lb flank steak, sliced
  • 2 1/2 Tbsp dark soy sauce
  • 2 1/2 tsp corn starch (dissolved in liquid from wok)
  • 2 tsp sugar (divided)
  • 5 1/2 Tbsp peanut oil
  • 5 medium tomatoes, quartered
  • 1/2 tsp salt
  • 2 green onions, sliced into 1″ pieces

Directions

  1. Combine beef with 1 tsp sugar & 1 1/2 Tbsp oil. Set aside.
  2. Heat 1 Tbsp oil in wok & stir fry tomatoes for 1 minute.
  3. Remove tomatoes. Stir in 1/2 tsp salt & 1 tsp sugar. Set aside.
  4. Clean wok.
  5. Heat 3 Tbsp oil & stir fry beef for 3-4 minutes.
  6. Add corn starch, tomatoes & green onions. Stir until hot.

Notes

Use a better cut of meat for a upgraded meal. Consider using 1 1/2 tsp of corn starch.
