Guacamole

Ingredients

  • 3 Haas avocados, halved, seeded & peeled
  • 1 lime, juiced
  • 1/2 tsp. kosher salt
  • 1/2 tsp. ground cumin
  • 1/2 tsp. cayenne pepper
  • 1/2 med. onion, diced
  • 1/2 jalapeno pepper, seeded & minced
  • 2 Roma tomatoes, seeded & diced
  • 1 Tbsp. cilantro, chopped
  • 1 clove garlic, minced

Instructions

  1. Toss avocado in lime juice. Drain & save lime juice.
  2. Add salt, cumin & cayenne pepper. Combine w/ potatoe masher.
  3. Fold in onions, tomatoes, cilantro, & garlic.
  4. Add 1 tsp. lime juice.
  5. Allow to stand a room temperature for 1 hour.

Notes

  • Consider using only 1/4 c. onion.
  • Use 1/4 of the jalapeño to reduce spiciness.
  • Add salt to taste.
